Drinks & Vegan Hors d’oeuvres

While we are still in college and most of our “gatherings” consist of cheap drinks, flashing lights and loud music, there comes a time when we tire of the noise and scandalous outfits. Sometimes a fancy night in becomes more appealing. So for the hostess who wants to have the most-est, here’s a completely vegan dish to serve over drinks and laughs with your friends.

Cashew Brie

1 ½ cups raw, unsalted cashews soaked in water over night (or boiled for 20 minutes)

¼ cup sundried tomatoes
¼- ½ cup water (depending on how thick you want the spread)

1 tbsp. nutritional yeast

1 tsp garlic powder

1 tsp onion powder

Pinch of parsley

Pinch of curry powder (optional)

Drain cashews and combine all ingredients in a food processor. Process on high until smooth. Add more water if you don’t think it’s as spreadable as you’d like it to be. Serve with pita chips, vegan crackers, cucumbers, or whatever else tickles your fancy!
