Simple and Speedy Sundried Tomato Dish

Take some time out of your busy schedule to make this simple and delectable dish. Suitable for vegans and vegetarians too!

Prep time and cook time: 20 minutes
Serves 3-4 people (depending on how hungry you are!)

•1 lb penne pasta
•1 ½ cup sundried tomatoes sliced(about a pint)
•1 ½ cup pitted Kalamata olives chopped
•10 oz bag of fresh spinach
•1 clove garlic minced
•¼ pound brie cheese
•1 tablespoon olive oil
•1 teaspoon salt
*minus cheese for vegans

Boil 4 quarts of water and add salt for taste. Add pasta and stir periodically until al dente or firm. In the meantime, take the brie cheese and trim the outer layer. Chop into small chunks and put aside.

Sautee garlic and oil in a medium sized pan and add in the olives and tomatoes. Add spinach towards the end of sautéing.
Drain pasta and place back in pot. Put heat on low and distribute cheese chunks evenly. Once cheese is melted completely, add in sundried tomatoes, olives, and spinach. Serve immediately and enjoy.
